Oatmeal Scotchies
These cookies prompted my co-workers to say they had been made by a “seasoned baker.”

These cookies are so easy, and they are a little different, so they are sure to be a crowd pleaser. My mom refers to them as “healthy” cookies because they have oats in them. Listen, I’m not going to correct her!
What you’ll need…
1 1/2 C Flour 1 tsp Baking Soda 1/2 tsp Salt 1/2 tsp Cinnamon 1 C Butter (2 sticks) 3/4 C Sugar 3/4 C Packed Brown Sugar 2 Eggs 1 tsp Vanilla 3 C Oats (I like old fashioned rolled oats) 1 12oz bag Butterscotch Chips
Get Cooking…
Preheat oven to 375F.
In a large bowl, sift together the flour, baking soda, salt, and cinnamon. Set aside.
In a stand mixer, cream together the butter and sugars. Once homogenous, add in the eggs one at a time. After eggs are fully incorporated, add in vanilla.
Slowly add in the dry ingredients to mixer with the wet ingredients. When a Nice dough is formed, add in the oats and butterscotch chips.
In large scoopfuls, drop the dough onto parchment lined baking sheets. Make sure to leave a little room for the cookies to spread.
Bake at 375F for 7-8 minutes, or until edges are golden.

These cookies are a classic and very easy to make! Don’t be intimidated by the amount of oats that are necessary.
