Caprese Pasta
If you love caprese salad, you’ll love this pasta! So easy and inspired by your favorite simple Italian dish.

What you’ll need…
1 Package Linguine 1 Cup Pesto - See Note 1 Package Fresh Mozzarella balls 1 Cup Fresh Tomato Chunks Salt & Pepper
Get Cooking…
Cook pasta according to package directions – make sure to salt the water! That’s your only chance to flavor the pasta.
Cut up fresh tomato into large chunks and sprinkle with salt while on the cutting board to draw out some moisture.
When pasta is ready, drain noodles reserving some of the pasta water and return back to pot. Add the pesto and mix until all noodles are evenly coated. If the pesto is too thick, you can thin it out with some of the reserved pasta water. I usually go about a tablespoon at a time right into the pan with noodles and sauce.
Lastly, add the tomato chunks and mozzarella and give one last gentle stir to make sure every element is evenly distributed. Sprinkle with a little extra pepper if you like, and serve promptly! (If you top with extra parmesan, I won’t tell! The more cheese, the merrier.)
Note – You can use any pesto you like! I have a recipe for homemade pesto that is super easy and delicious, but if that’s not your jam I love the brand Buitoni. You can find it in the refrigerated section, usually by the dairy.
