Go-To Sugar Cookies

These are my favorite cookies to make for everything from shortbread-style treats to cut outs.

What you’ll need…

1 C Room Temperature Butter
1/2 C Sugar
1 tsp Vanilla Extract
1 tsp Almond Extract
1 tsp Butter (if using unsalted butter)
2-2 1/2 C All Purpose Flour

Get Cooking…

In the bowl of a stand mixer beat the butter on a medium speed until smooth. Add in the sugar and continue to mix until light. Add in extracts and salt and mix about 10 seconds longer.

Start to add in the flour on a low speed until a nice dough forms – you’ll want the dough to be smooth and firm, not too sticky and not too crumbly.

Transfer the dough to a large sheet of parchment, and place another sheet of parchment on top. Roll out dough to desired thickness, I like about 1/4 inch for my cookies.

Place the dough in the fridge for at least 30 minutes to chill.

Remove from fridge and remove top layer of parchment. Cut out dough using desired shapes and place on a parchment lined baking sheet. Bake at 350F for 10 minutes or until bottoms are slightly golden (cooking times will vary based on size of cookie). Cool completely before decorating, and enjoy!

If re-using dough scraps to be rolled out again, place those cut outs in the fridge while the first batch bakes. Keeping the butter nice and chilled will help the cookies keep their shape when baking.
