What you’ll need…

1/2 C Butter (1 stick)
1/2 C Buttermilk
1/2 C Sour Cream
2 Eggs, separated
2 3/4 C Flour
1/2 C Sugar
1 1/2 tsp Baking Powder

2 C Shredded Cheddar Cheese

Get Cooking…

Preheat oven to 350F.

Cube the butter and stick in freezer until ready to use.

In a small bowl whisk buttermilk, sour cream, and 1 egg and set aside in the fridge.

In the bowl of a stand mixer combine flour, sugar, baking powder, baking soda, salt, and cheese until just combined.

Remove butter from the freezer and sprinkle into flour mixture. Mix again for an additional 15-30 seconds. Add in the buttermilk mixture and mix until combined and a loose dough has formed.

Turn dough out onto a lightly floured surface, or parchment, and shape into a circle about 1 inch in thickness. Using a sharp knife cut the dough into 8 slices and place onto a parchment lined baking sheet. Use remaining egg and brush scones with egg wash. Bake at 350F for 35-40 minutes or until golden brown.
