Five Ingredient Banana Bread – aka not as good as regular banana bread (as my dad would say).

It’s not quite the same, but you will love it, I promise. I know it is weird to market my own recipe as not as good as the real thing, but to be honest I think it’s better to be self aware in this situation. When comparing a sugary, floury classic to a healthier version – there’s really no comparison. BUT this five ingredient banana bread will be your next go-to for make ahead breakfast. It’s really dense, really gooey, and really good.
What you’ll need…
1 lb ripe bananas 2 Cups oats 1 Cup Peanut butter 1 tbsp honey ½ Cup mini chocolate chips (or more, jk definitely more - I won’t tell!)
Get Cooking…
Preheat the oven to 350 F.
Start by pulsing the oats in a food processor until a coarse flour is formed. Remove the oats from the processor, and set aside.
Add the bananas to the processor and pulse until fully mashed. Next, add the honey and peanut butter and pulse until fully combined. Add in the oats, and when evenly mixed, add in the chocolate chips.
Pour the mixture into a greased loaf pan and bake for 30 minutes, or until a fork inserted into the center comes out clean.
Serve immediately, or cut into slices and package up for meal prepped breakfasts. I like to reheat in the microwave for about 30 seconds to 1 minute.
You can also bake this recipe in muffin tins. I find that it portions out into 12 perfectly sized muffins that bake up in about 20 minutes or less.
