Roasted Broccoli

Maybe I am late to the game, but I just started roasting broccoli. It’s amazing!

What you’ll need…

2 Crowns Broccoli (yes, that is what they are called)
2-3 Tbsp Olive Oil
Salt and Pepper to taste

Get Cooking…

Preheat oven to 425F and line a large baking sheet with foil. Spray with cooking spray lightly. (I like to use a large baking sheet when roasting because this will ensure you get a nice browning. If you use too small of a pan, or overcrowd the pan you will end up steaming the vegetables instead.)

Cut the broccoli off the stalk into bite sized pieces and place in a colander. Rinse with water and use a paper towel to help pat dry.

Arrange the broccoli on the pan, drizzle with olive oil, and season with salt and pepper. (You can spice these up with other seasonings – my favorites are crushed red pepper flake, paprika, and garlic powder – but I really love to keep this simple. The roasting compliments the actual broccoli flavor, and its perfect just the way it is!)

Using your hands or a spatula move the broccoli around the pan to evenly coat the pieces in oil and seasoning.

Transfer the pan to the oven and roast for about 15 minutes, mixing around halfway through.

Like I said, this is a simple, easy recipe. I like to enjoy it as is on the side of chicken, steak, or salmon – she’s a versatile side dish! If I feel like I want to dip the broccoli in a sauce, I love to pair it with the Aioli Garlic Mustard Sauce from Trader Joe’s.
